Advanced Japanese Knife Sharpening Class - Sept 23, 2012
 
This will be a hands on class for learning advanced techniques used to sharpen, maintain, and modify Japanese kitchen knives.
 
Subjects to be covered:
Damage repair - tips, heels, and nicks
Single bevel maintenance, repairs, modifications
Edge/Blade Thinning
Etching/Damascus repair
Surface texture
 
Provided:
Water buckets (for soaking stones)
Paper (for test cutting)
Lunch

 
Class Requirements:
Having already attended our basics class OR possess a strong understanding of the fundamentals of hand sharpening.
Japanese Knives (double bevel and/or single bevel)
Sharpening Stones (Coarse, Medium, Fine)
Stone Flattener
Nagura stone (optional)
Stone Holder (optional)
Good attitude :)

If you live close enough to drive you need to take the classes Dave offers.  It's a concise workshop essential to anyone starting out, brushing up or refining their technique.

When I took the class I wasn't a beginner but I was able to take a good deal away from the experience.  Dave reaffirmed me I was on the right path and helped me understand why what I was doing was working and how to improve my weak points, tips and heals.

A lot of ground is covered and is thoroughly explained.  The class ran long due to the amount of questions asked and detailed responses.  Dave made sure we had a firm grip on the concepts before moving on.

I took the class during the winter without a proper jacket so the shop was a colder than I was prepared for.  I assume it gets pretty sweltering in the summer.  Dress accordingly.

Overall it's a smart, fun class that's extremely useful.  Also, you get to hang out with other knife nuts and have a little show and tell.  Plus there's SANDWICHES!!!
