Dave's Technique is sound & also he explains what he is doing and why.This is helpful to persons just learning to freehand Kitchen knives on whetstones.

...about sharpening knives. Recently purchased a harder steel knife and a basic set of water stones. I very much want to it to stay at its best. Dave Martell came highly recommended by every forum I used to research my purchases. There are a couple of places in my copy where the audio does not track. I'm still glad to have it.

waiting for volume II

the only thing I can say bad about this set is that it says volume I. I bought this set needing a refresher coarse. And I got that and more. Dave goes into differences of angles. Why kitchen knife edges are different from other knives. Also types of kitchen blades. What I found interesting was the single bevel sharpening, I have never seen one in real life, and now I think I can sharpen one.
A must have for every cook that doesn't like dull knives.
