Japanese Knife Sharpening Class - Basics
This will be a hands on class for learning both basics and advanced techniques used to sharpen and maintain Japanese kitchen knives.
Subjects to be covered:
Control techniques & tips
Damage repair - tips, heals, and nicks
Single bevel maintenance (includes single bevel kasumi "mist")
Water buckets (for soaking stones)
Paper (for test cutting)
Japanese Knives (double bevel and/or single bevel)
Sharpening Stones (Coarse, Medium, Fine)
Nagura stone (optional)
